Step-by-Step Instructions for Easy Tanghulu
- Begin by carefully washing your chosen fruits under cool running water. Pat them dry to remove excess moisture, then skewer them onto bamboo skewers.
- In a medium-sized pot, combine 2 cups of granulated sugar and 1 cup of water. Heat over medium, stirring until sugar dissolves. Do not stir once it simmers. Boil for about 10-15 minutes until syrup reaches 300°F.
- Dip a wooden skewer into the hot syrup and plunge in cold water. If it hardens quickly, it's ready. If not, boil a few more minutes.
- Tilt the saucepan and lower each fruit skewer into the hot syrup, rotating for an even coating. Allow excess syrup to drip back into the pot.
- Prepare an ice bath and place the dipped skewers in it to set the syrup quickly, about 1-2 minutes. Transfer to a parchment-lined baking sheet and enjoy immediately.

Notes
Serve Tanghulu fresh for the best texture; the candy coating may soften if stored.
