- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine crumbled feta cheese, chopped dill, mint, lemon zest, and black pepper until creamy.
- Lay one sheet of phyllo pastry flat, brush it with olive oil, place another sheet on top, and brush it again.
- Cut the phyllo into four strips and place about 1 tablespoon of filling at one end of each strip. Roll tightly.
- Arrange the rolls seam-side down on the baking sheet and brush the tops with olive oil.
- Bake for 18-20 minutes or until golden brown and crispy.
- In a saucepan, combine honey, chili flakes, and lemon juice over low heat and stir until well blended.
