- Preheat your oven to 350°F (175°C) and grease four mini loaf pans or one large loaf pan.
- In a large mixing bowl, combine peaches, oil, sugar, eggs, sour cream, and vanilla. Mix until well blended and creamy.
- Sift in flour, baking soda, and salt. Fold gently to combine without over-mixing.
- Pour the batter into the prepared pans, filling each about two-thirds full and smooth the tops.
- Bake mini loaves for 25-30 minutes or 50-55 minutes for a large loaf until a toothpick comes out clean.
- Let the loaves cool in the pans for 10 minutes, then remove and cool completely on a wire rack.
