Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and grease four mini loaf pans or one large loaf pan.
  2. In a large mixing bowl, combine peaches, oil, sugar, eggs, sour cream, and vanilla. Mix until well blended and creamy.
  3. Sift in flour, baking soda, and salt. Fold gently to combine without over-mixing.
  4. Pour the batter into the prepared pans, filling each about two-thirds full and smooth the tops.
  5. Bake mini loaves for 25-30 minutes or 50-55 minutes for a large loaf until a toothpick comes out clean.
  6. Let the loaves cool in the pans for 10 minutes, then remove and cool completely on a wire rack.
