- Make the Cowboy Butter: In a mixing bowl, blend together softened unsalted butter, minced garlic, Dijon mustard, and lemon juice. Stir in chopped parsley and chives, along with paprika, red pepper flakes, salt, and black pepper.
- (Optional) Sear the Steak: If desired, heat a skillet over medium-high heat and add a drizzle of oil. Sear the chuck roast or sirloin tips for 2–3 minutes on each side. Remove the steak and let it rest while preparing the slow cooker.
- Prepare the Potatoes: Halve your baby potatoes and layer them evenly at the bottom of the slow cooker.
- Add the Steak: Place the seared steak on top of the halved potatoes in the slow cooker.
- Spoon on the Cowboy Butter: Evenly distribute the prepared cowboy butter sauce over the steak and potatoes.
- Add Beef Broth: Pour beef broth around the edges of the slow cooker, being careful not to wash away the cowboy butter.
- Slow Cook the Dish: Cover the slow cooker and set it to cook on LOW for 6–8 hours or HIGH for 3–4 hours.
- (Optional) Thicken the Sauce: Mix together 1 tablespoon of cornstarch with 1 tablespoon of cold water, and stir into the slow cooker during the last 30 minutes of cooking.
