Step-by-Step Instructions
  1. Make the Cowboy Butter: In a mixing bowl, blend together softened unsalted butter, minced garlic, Dijon mustard, and lemon juice. Stir in chopped parsley and chives, along with paprika, red pepper flakes, salt, and black pepper.
  2. (Optional) Sear the Steak: If desired, heat a skillet over medium-high heat and add a drizzle of oil. Sear the chuck roast or sirloin tips for 2–3 minutes on each side. Remove the steak and let it rest while preparing the slow cooker.
  3. Prepare the Potatoes: Halve your baby potatoes and layer them evenly at the bottom of the slow cooker.
  4. Add the Steak: Place the seared steak on top of the halved potatoes in the slow cooker.
  5. Spoon on the Cowboy Butter: Evenly distribute the prepared cowboy butter sauce over the steak and potatoes.
  6. Add Beef Broth: Pour beef broth around the edges of the slow cooker, being careful not to wash away the cowboy butter.
  7. Slow Cook the Dish: Cover the slow cooker and set it to cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  8. (Optional) Thicken the Sauce: Mix together 1 tablespoon of cornstarch with 1 tablespoon of cold water, and stir into the slow cooker during the last 30 minutes of cooking.
