Cooking Steps
- Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
- Stir in the chopped carrots and spices (turmeric and cumin), sautéing for another 3-4 minutes until fragrant.
- Add the rinsed lentils and water or broth. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
- Stir in fresh herbs and lemon juice when lentils are tender. Adjust seasoning as needed.
- Serve hot, garnished with extra herbs and a drizzle of olive oil. Enjoy with crusty bread!
