  • 6 cups water or vegetable broth Use vegetable broth for vegan
  • 1 cup lentils Rinsed
For the Aromatics
  • 1 medium onion Diced
  • 2 medium carrots Chopped
For the Spice Blend
  • 1 teaspoon turmeric
  • 1 teaspoon cumin Adjust according to taste
For the Fresh Touch
  • 1 handful fresh parsley Chopped
  • 1 handful fresh cilantro Chopped
  • 1 medium lemon juice Adjust to taste

Cooking Steps
  1. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes until translucent.
  2. Stir in the chopped carrots and spices (turmeric and cumin), sautéing for another 3-4 minutes until fragrant.
  3. Add the rinsed lentils and water or broth. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  4. Stir in fresh herbs and lemon juice when lentils are tender. Adjust seasoning as needed.
  5. Serve hot, garnished with extra herbs and a drizzle of olive oil. Enjoy with crusty bread!
