- Brown the Butter: Melt 1 cup of unsalted butter over medium heat, stirring constantly for about 5-7 minutes until golden brown and nutty aroma develops. Cool in fridge for about 1 hour.
- Prepare Cookie Dough: Combine cooled brown butter with 3/4 cup granulated sugar and 3/4 cup light brown sugar until creamy. Add 1 large egg and mix. Gradually sift in 1 1/2 cups flour and finally mix in 1 cup chocolate chips.
- Prepare Brownie Batter: Melt 4 oz bittersweet chocolate with 1/2 cup unsalted butter. Once smooth, whisk in 1/2 cup sugar and 1 large egg, then fold in 1/2 cup flour until just incorporated.
- Layer in Pan: Preheat oven to 350°F. Grease an 8x8 in pan. Spread 1/3 of brownie batter in pan, dollop cookie dough, alternate layers until all is used.
- Bake: Bake for 25-30 minutes. Look for golden edges and soft center; tent edges with foil if they brown too quickly.
- Cool: Let brookies cool in pan for at least 10 minutes, then cool completely for slicing.
