Step-by-Step Instructions
  1. In a stand mixer, cream the butter, granulated sugar, and brown sugar until light and fluffy, about 5 minutes.
  2. Incorporate eggs one at a time and add vanilla, mixing until smooth.
  3. Sift together the dry ingredients and gradually mix into the wet ingredients until combined.
  4. Fold in chocolate chips and Easter sprinkles until no dry flour remains.
  5. Portion the dough into rounds, flatten slightly, and enclose a Peep in each.
  6. Chill the dough balls on a baking sheet for at least 2 hours.
  7. Preheat the oven to 375°F and prepare baking sheets with parchment paper.
  8. Bake the cookies for 14-16 minutes until golden around the edges.
  9. Cool cookies on the baking sheet for 20-30 minutes before handling.
