- Preheat your oven to 425°F (220°C) and lightly grease a baking sheet with olive oil.
- In a small bowl, combine olive oil, minced garlic, chopped fresh thyme, rosemary, and optional chives. Mix well to create a fragrant herb oil.
- Peel Yukon gold potatoes and cut them into ½ inch thick rounds. Use a heart-shaped cookie cutter to cut out heart shapes from each slice.
- Toss the heart-shaped potato cutouts with the herb oil mixture, seasoning with sea salt and black pepper to taste.
- Arrange the coated heart-shaped potatoes on the greased baking sheet in a single layer and roast for 20-30 minutes until golden brown and fork-tender.
