Ingredients

Dough Ingredients
  • 1/4 cup Sugar Activates yeast while adding sweetness; coconut sugar can be used for a lower glycemic option.
  • 1 teaspoon Ground Cardamom Infuses warm spice notes; cinnamon works well in a pinch.
  • 1/2 cup Unsalted Butter Adds richness; margarine serves as a great dairy-free substitute.
  • 1 cup Evaporated Milk Moisten the dough for tenderness; interchangeable with whole or plant-based milk.
  • 1 teaspoon Coarse Salt Enhances flavor; sea salt or kosher salt are excellent alternatives.
  • 1/2 cup Warm Water Essential for activating yeast; ensure it's at 110°F.
  • 2 teaspoons Active Dry Yeast Leavens the dough wonderfully; instant yeast can be used.
  • 4 cups All-Purpose Flour Provides structure; for gluten-free use, opt for a yeast-friendly blend.
  • 1 cup Sour Cream Introduces moisture and tenderness; plain yogurt can be substituted.
  • 2 large Eggs Adds richness and structure; flaxseed meal mixed with water for vegan option.
Filling Ingredients
  • 1 teaspoon Ground Cinnamon Adds a warm flavor; can be omitted for a more pure cardamom experience.
  • 1/2 cup Powdered Sugar Sweetens the glaze; erythritol powder can be used for a sugar-free version.
Glaze Ingredients
  • 1/4 cup Cream or Whole Milk Provides richness; any plant-based milk is a good alternative.
  • 1 tablespoon Orange Zest Heightens the citrus profile; zest from lemons for a fresh twist.

Method

Dough Preparation
  1. In a small saucepan, combine sugar, ground cardamom, butter, evaporated milk, and coarse salt over low heat, stirring until the butter melts. Remove from heat and allow to cool slightly until lukewarm.
  2. In a bowl, sprinkle active dry yeast over warm water and let sit for 5 minutes until frothy. Mix in cooled milk mixture, then add flour, sour cream, and eggs until well combined.
  3. Knead with a dough hook for about 4 minutes until smooth. Transfer to a greased bowl, cover, and let rise in a warm spot for 1.5 hours.
Filling and Shaping
  1. Mix softened butter, cinnamon, and granulated sugar to make a filling paste.
  2. Once the dough rises, punch it down, roll out, and spread half of the filling over it. Fold, slice into strips, and twist each into a knot on parchment-lined baking sheets.
  3. Allow to rest for 15 minutes.
Baking and Glazing
  1. Preheat oven to 350°F. Bake rolls for 20 minutes until golden brown.
  2. Whisk together melted butter, powdered sugar, cream, and orange zest until smooth. Adjust with milk if too thick.
  3. Drizzle glaze over warm rolls before serving.
