Step-by-Step Instructions for Chicken-Fried Mushrooms & Gravy
  1. Prepare Buttermilk Mixture: Whisk together unsweetened almond milk and apple cider vinegar. Let thicken for 5 minutes.
  2. Mix Dry Ingredients: Blend together all-purpose flour, cornstarch, sweet paprika, garlic powder, onion powder, turmeric, kosher salt, and black pepper.
  3. Coat the Mushrooms: Dip oyster mushrooms into the buttermilk, then coat them thoroughly in the seasoned flour mixture.
  4. Heat Oil for Frying: Heat vegetable oil in a large skillet until it reaches 350°F (175°C).
  5. Fry the Mushrooms: Fry coated mushrooms in batches for about 3-4 minutes on each side until golden brown.
  6. Sauté for Gravy: Melt vegan butter, add chopped cremini mushrooms and minced garlic, sauté for 5 minutes.
  7. Create the Gravy: Sprinkle flour over sautéed mushrooms and garlic, stir and gradually add almond milk. Cook until thickened.
