Step-by-Step Instructions for Honey Lemon Pink Soda
  1. In a small saucepan, combine honey and ½ cup of water over low heat. Stir continuously for about 3–5 minutes until the honey dissolves completely into a smooth syrup. Remove from heat and let it cool while preparing the other ingredients.
  2. Squeeze fresh lemons using a citrus juicer until you have approximately 1 cup of lemon juice. Strain through a fine mesh sieve if desired and set aside.
  3. In a large pitcher, combine the cooled honey syrup, fresh lemon juice, and 1 cup of cranberry juice. Stir gently until all ingredients are blended and achieve a pink hue.
  4. Just before serving, slowly pour in 4 cups of chilled sparkling water into the pitcher. Stir carefully to combine, keeping the fizzy bubbles.
  5. Fill serving glasses with fresh ice cubes and pour the mixture over the ice.
  6. Garnish each glass with a slice of lemon and a few fresh mint leaves. Serve immediately.
