Step-by-Step Instructions for Honey Lemon Pink Soda
- In a small saucepan, combine honey and ½ cup of water over low heat. Stir continuously for about 3–5 minutes until the honey dissolves completely into a smooth syrup. Remove from heat and let it cool while preparing the other ingredients.
- Squeeze fresh lemons using a citrus juicer until you have approximately 1 cup of lemon juice. Strain through a fine mesh sieve if desired and set aside.
- In a large pitcher, combine the cooled honey syrup, fresh lemon juice, and 1 cup of cranberry juice. Stir gently until all ingredients are blended and achieve a pink hue.
- Just before serving, slowly pour in 4 cups of chilled sparkling water into the pitcher. Stir carefully to combine, keeping the fizzy bubbles.
- Fill serving glasses with fresh ice cubes and pour the mixture over the ice.
- Garnish each glass with a slice of lemon and a few fresh mint leaves. Serve immediately.
