Ingredients
  

For the Steak Marinade
  • 1 pound Flank Steak can be substituted with skirt steak or ribeye
  • ¼ cup Fresh Lime Juice about 2 limes, fresh is best
  • ¼ cup Olive Oil can use avocado oil
  • ¼ cup Fresh Cilantro chopped, substitute with parsley if preferred
  • 3 cloves Garlic minced
  • 1 teaspoon Ground Cumin can substitute with ground coriander
  • 1 teaspoon Chili Powder adjust for heat preference
  • 1 teaspoon Salt use sea salt or kosher salt
  • ½ teaspoon Black Pepper freshly ground is ideal
For the Bowl
  • 1 cup Cooked Rice white or brown, can substitute with quinoa or cauliflower rice
  • 1 can Black Beans rinsed and drained
  • 1 cup Corn fresh, frozen, or canned
  • 1 cup Cherry Tomatoes halved
  • 1 whole Avocado sliced
  • ½ cup Red Onion diced
  • ½ cup Feta Cheese crumbled, optional
  • Extra Cilantro for garnish
  • Lime Wedges for serving

Method
 

Instructions
  1. In a medium bowl, whisk together fresh lime juice, olive oil, chopped cilantro, minced garlic, ground cumin, chili powder, salt, and black pepper. Coat the flank steak in the marinade, cover, and refrigerate for at least 30 minutes or up to 4 hours.
  2. While the steak marinates, cook the rice according to package instructions, usually about 15-20 minutes. Heat the rinsed black beans in a small saucepan for about 5 minutes.
  3. Preheat your grill to medium-high heat. Grill the flank steak for 4-5 minutes on each side until an internal temperature of 130°F is reached. Let the steak rest for 5-10 minutes before slicing.
  4. Assemble the bowls by dividing the cooked rice among serving bowls. Top with black beans, corn, cherry tomatoes, avocado, red onion, and sliced steak. Garnish with feta cheese, extra cilantro, and lime wedges.
