- In a medium bowl, whisk together fresh lime juice, olive oil, chopped cilantro, minced garlic, ground cumin, chili powder, salt, and black pepper. Coat the flank steak in the marinade, cover, and refrigerate for at least 30 minutes or up to 4 hours.
- While the steak marinates, cook the rice according to package instructions, usually about 15-20 minutes. Heat the rinsed black beans in a small saucepan for about 5 minutes.
- Preheat your grill to medium-high heat. Grill the flank steak for 4-5 minutes on each side until an internal temperature of 130°F is reached. Let the steak rest for 5-10 minutes before slicing.
- Assemble the bowls by dividing the cooked rice among serving bowls. Top with black beans, corn, cherry tomatoes, avocado, red onion, and sliced steak. Garnish with feta cheese, extra cilantro, and lime wedges.
