Method
 

Preparation
  1. In a mixing bowl, whisk together 3 tablespoons of olive oil and juice of 1 fresh lemon until fully combined.
  2. Drizzle a small amount of dressing into a large salad bowl to coat the bottom.
  3. Gently add 4 cups of fresh arugula into the bowl with the dressing and toss until coated.
  4. Taste a leaf to adjust dressing, salt, or pepper as necessary.
  5. Top the salad with a generous handful of shaved Parmesan.
  6. Transfer the finished salad to a serving dish and serve immediately.
