  • 1 cup full-fat Greek yogurt or low-fat for a lighter option
  • 3 tablespoons extra-virgin olive oil substitute with avocado oil for a neutral taste
  • 1 tablespoon lemon juice lime juice can be used as an alternative
  • 1 teaspoon lemon zest omitting may reduce brightness
  • 2 tablespoons chopped dill can substitute with parsley
  • 1 clove garlic grated or minced for flavor
  • water add to reach desired consistency
  • to taste kosher salt table salt can be used in reduced quantity
  • to taste freshly ground black pepper omitting will reduce flavor
Salad
  • 6 cups chopped romaine or mixed greens for variation
  • 4 large hard-boiled eggs peeled and quartered
  • 1 cup homemade croutons or store-bought for convenience
  • ½ cup thinly sliced radishes red and/or watermelon
  • 1 large ripe avocado sliced
  • 1 cup halved snap peas trimmed and halved lengthwise

Dressing Preparation
  1. In a medium bowl, whisk together Greek yogurt, olive oil, lemon juice, lemon zest, chopped dill, minced garlic, and enough water to reach desired consistency. Season with salt and pepper. Let sit for 10 minutes.
Salad Preparation
  1. In a large salad bowl, combine chopped romaine, quartered hard-boiled eggs, croutons, sliced radishes, sliced avocado, and halved snap peas. Distribute evenly.
  2. Pour the dressing over the salad and gently toss to coat, being careful not to break the egg or avocado.
  3. Serve immediately for best texture and freshness.
