- In a medium mixing bowl, blend 8 ounces of softened cream cheese until creamy and smooth. Gradually mix in 1 cup of crushed pineapple, 1-2 finely chopped jalapeños, 2 chopped green onions, ½ cup of chopped pecans, ½ cup of sweetened coconut flakes, and the juice of 1 lime until well combined.
- Place a large piece of plastic wrap on a clean surface. Transfer the mixture onto the center of the wrap, and shape it into a tight log, about 10-12 inches long. Wrap the log tightly in the plastic wrap.
- Refrigerate the wrapped cream cheese log for at least 2 hours to firm up the log and allow the flavors to meld.
- Remove the log from the refrigerator and unwrap it. Roll the chilled log in any remaining chopped pecans and sweetened coconut flakes until evenly coated.
- Slice the log into ½-inch thick pieces and arrange on a serving platter with an assortment of crunchy crackers or fresh vegetable sticks.
