Method
 

Prepare the Coating
  1. In a large bowl, whisk together flour, kosher salt, black pepper, and garlic powder until combined. Cut chicken thighs into bite-sized pieces and toss in the flour mixture until coated.
Fry the Chicken
  1. Heat about ½ inch of oil in a large skillet over medium-high heat until shimmering (approximately 350°F). Carefully add coated chicken pieces to the hot oil, frying for 5-7 minutes until golden and crispy. Remove and drain on paper towels.
Make the Sauce
  1. Lower heat to medium, add unsalted butter, and melt. Stir in honey, soy sauce, and minced garlic, simmering for about 2 minutes until thickened.
Glaze the Chicken
  1. Return fried chicken to the skillet and toss in the sauce for about 1 minute, ensuring each piece is coated with the glaze.
Serve and Enjoy
  1. Remove the pan from heat and serve the honey butter chicken hot over rice or with mashed potatoes. Garnish if desired.
