Ingredients
  

For the Batter
  • 3 pieces Apples substitution: use pears for a different twist
  • 50 g Coconut Oil can substitute with vegetable oil if preferred
  • 50 g Brown Erythrit sweetener replacement for traditional sugar
  • 80 g Xylit can be swapped with more erythrit or coconut sugar
  • 3 pieces Eggs vegan option: replace with 1 tablespoon of chia seeds soaked in water
  • 1 tablespoon Vanilla Extract almond extract can provide a unique twist
  • 100 g Yogurt or Quark for a dairy-free option, use plant-based yogurt
  • 200 g Applesauce feel free to swap with any fruit puree
  • 300 g Whole Wheat Flour go gluten-free by substituting with gluten-free flour
  • 2 teaspoons Baking Powder
  • 1 teaspoon Cinnamon nutmeg can be used in its place for variety
  • ½ teaspoon Nutmeg optional and can be substituted with extra cinnamon

Method
 

Preparation and Baking
  1. Preheat your oven to 180°C (356°F) and line a loaf pan with baking paper or grease with coconut oil.
  2. In a large bowl, mix melted coconut oil, brown erythrit, xylit, and eggs. Add vanilla extract, yogurt, and applesauce, then whisk until smooth.
  3. In another bowl, whisk together whole wheat flour, baking powder, cinnamon, and nutmeg.
  4. Gradually combine the dry ingredients with the wet ingredients, stirring gently. Fold in diced apples.
  5. Pour the batter into the loaf pan and bake for 30 to 40 minutes, checking with a toothpick after 30 minutes.
  6. After baking, cool in the pan for about 10 minutes before transferring to a wire rack.
