Preparation and Baking
- Preheat your oven to 180°C (356°F) and line a loaf pan with baking paper or grease with coconut oil.
- In a large bowl, mix melted coconut oil, brown erythrit, xylit, and eggs. Add vanilla extract, yogurt, and applesauce, then whisk until smooth.
- In another bowl, whisk together whole wheat flour, baking powder, cinnamon, and nutmeg.
- Gradually combine the dry ingredients with the wet ingredients, stirring gently. Fold in diced apples.
- Pour the batter into the loaf pan and bake for 30 to 40 minutes, checking with a toothpick after 30 minutes.
- After baking, cool in the pan for about 10 minutes before transferring to a wire rack.
