- Preheat your oven to 425°F (220°C). Press tofu for 15 minutes, then tear into 1-inch chunks.
- In a large mixing bowl, combine tofu, tamari, cooking oil, cornstarch, and seasonings, tossing gently.
- Spread tofu on a parchment-lined baking sheet and bake for 30 minutes, flipping halfway through.
- In a separate bowl, whisk together miso paste, brown sugar, tamari, and mirin. Add warm water to achieve desired consistency.
- Sauté scallions, garlic, ginger, and chilies in a skillet for 3-4 minutes until fragrant.
- Add miso sauce to sautéed aromatics, and simmer for 5 minutes. Thicken with cornstarch slurry if desired.
- Gently combine baked tofu with the miso sauce, simmering for an additional 1-2 minutes.
- Serve Sticky Miso Tofu over rice, quinoa, or in lettuce wraps.
