- In a large mixing bowl, pour 6 cups of Rice Chex cereal and set it aside for later.
- In a small saucepan, combine 1 cup of milk chocolate chips, 1/2 cup of creamy peanut butter, and 1/4 cup of butter. Heat over low heat, stirring frequently for about 3-5 minutes until melted and smooth. Stir in 1 teaspoon of vanilla.
- Carefully pour the melted chocolate-peanut butter mixture over the Rice Chex cereal in your mixing bowl. Use a spatula to gently fold the mixture until all pieces are coated.
- Transfer the coated cereal mixture to a gallon Ziplock bag, adding 2 cups of powdered sugar. Seal the bag, then shake vigorously for about 30 seconds.
- Before serving, add desired amounts of St. Patrick’s Day Lucky Charms marshmallows to the bag and gently toss the mixture.
