- Prepare Filling: In a large mixing bowl, combine shredded chicken, cream cheese, diced sausage (if using), green onions, cheddar cheese, hot sauce, and Cajun seasoning. Mix thoroughly until all ingredients are well incorporated.
- Assemble Egg Rolls: Lay an egg roll wrapper diagonally on a clean surface. Spoon about 2 tablespoons of the prepared Voodoo Egg Rolls filling onto the bottom corner of the wrapper. Fold the bottom corner over the filling, then fold in the sides, and roll it tightly toward the top corner, sealing the edge with beaten egg.
- Heat Oil: In a deep skillet or fryer, pour in about 2 inches of vegetable oil. Heat the oil to 350°F (175°C); check with a thermometer.
