  • 1/2 cup Cake Flour Can be replaced or partially replaced with more all-purpose flour.
  • 2 large Eggs Use room-temperature eggs for better blending.
  • 1 1/2 cups Dashi Homemade or store-bought dashi is ideal; can use light vegetable broth in a pinch.
  • 1 tablespoon Soy Sauce Tamari can be used for a gluten-free option.
For the Filling
  • 1 cup Cooked Octopus Substitute with cooked shrimp or chicken for variations.
  • 1 cup Cabbage Can be omitted or replaced with finely chopped vegetables.
  • 1/4 cup Scallions Chives can be used instead.
For Cooking & Topping
  • 1 tablespoon Toasted Sesame Oil
  • 1/4 cup Takoyaki Sauce or Tonkatsu Sauce Top with both for added flavor dimensions.
  • 2 tablespoons Aonori (dried seaweed flakes) Substitution: Crushed nori can be used in its place.
  • 1 cup Bonito Flakes Can be omitted if unavailable; the dish will still be delicious.
  • 1/2 cup Kewpie Mayonnaise Regular mayonnaise can be used, but will alter taste.

Method
 

Step-by-Step Instructions for Takoyaki
  1. In a mixing bowl, whisk together 1 cup of all-purpose flour, 1/2 cup of cake flour, 2 large eggs, 1 1/2 cups of dashi, and 1 tablespoon of soy sauce until smooth.
  2. Preheat your takoyaki maker or grill pan over medium heat for about 5 minutes. Drizzle toasted sesame oil into each mold.
  3. Pour the batter into each mold until 3/4 full. Add pieces of cooked octopus and scallions, then cover with more batter.
  4. Cook the Takoyaki for approximately 3 minutes until golden brown on the underside.
  5. Using skewers or chopsticks, flip each Takoyaki ball to cook the other side for another 1-2 minutes.
  6. Remove from the molds, drizzle with Takoyaki sauce, add Kewpie mayonnaise, and sprinkle with bonito flakes and aonori. Serve immediately.
