- Preheat your oven to 450°F (230°C) and place a rimmed baking sheet in the oven for about 5 minutes.
- Spread the marinated cauliflower florets onto the preheated baking sheet in a single layer and roast for 15 minutes.
- Remove and stir gently, then return to roast for another 10-15 minutes until tender and golden.
Tahini Sauce Preparation
- In a small bowl, whisk together tahini, water, lemon juice, minced garlic, and a pinch of salt until smooth.
- Adjust thickness with extra water if needed.

- Spread a layer of tahini sauce on a serving plate and arrange the roasted cauliflower on top.
- Garnish with parsley, toasted almonds, and pomegranate rubies, then serve with lemon wedges.
