Method
 

Preparation and Roasting
  1. Cut the cauliflower heads into evenly sized florets and place them in a large mixing bowl.
  2. In a separate bowl, whisk together olive oil, apple cider vinegar, ground cumin, Aleppo pepper flakes, sweet smoked paprika, garlic powder, cinnamon, turmeric, and salt.
  3. Pour the marinade over the cauliflower, ensuring all florets are well-coated, and let them marinate for 30 minutes.
  4. Preheat your oven to 450°F (230°C) and place a rimmed baking sheet in the oven for about 5 minutes.
  5. Spread the marinated cauliflower florets onto the preheated baking sheet in a single layer and roast for 15 minutes.
  6. Remove and stir gently, then return to roast for another 10-15 minutes until tender and golden.
Tahini Sauce Preparation
  1. In a small bowl, whisk together tahini, water, lemon juice, minced garlic, and a pinch of salt until smooth.
  2. Adjust thickness with extra water if needed.
Serving
  1. Spread a layer of tahini sauce on a serving plate and arrange the roasted cauliflower on top.
