Step-by-Step Instructions
  1. Preheat your broiler or set it to bake at 400°F for about 5 minutes.
  2. Heat 2 tablespoons of extra-virgin olive oil in a large oven-safe skillet over medium heat. Add 3 finely chopped garlic cloves and sauté for 1-2 minutes until fragrant.
  3. Add a 28-ounce can of whole tomatoes to the skillet, tearing them apart with a spoon. Stir in 2 tablespoons of tomato paste, 1/2 teaspoon of dried oregano, 1/4 teaspoon of crushed red pepper flakes, and 1 teaspoon of kosher salt. Optionally add 1/2 teaspoon of granulated sugar. Simmer for about 5 minutes.
  4. Fold in 2 cans of drained and rinsed cannellini beans into the sauce and stir for 2-3 minutes.
  5. Sprinkle 1 cup of shredded mozzarella and 1/4 cup of finely grated Parmesan cheese over the mixture.
  6. Place the skillet under the broiler for 3-5 minutes, until the cheese is bubbly and golden brown.
  7. Garnish with fresh basil leaves after removing from the oven and serve hot.
