- In a large mixing bowl, combine the ground chicken with finely chopped onion, minced garlic, fresh parsley, ground cumin, and ground coriander. Season the mixture with salt and black pepper to taste.
- Using clean hands, thoroughly mix the chicken mixture until it holds together and feels slightly tacky.
- Wet your hands and roll portions of the mixture into 10-12 oval-shaped koftas.
- Preheat your grill to medium-high heat, around 200°C (400°F) and lightly oil the grill grates.
