Method

Step-by-Step Instructions
  1. In a large mixing bowl, combine the ground chicken with finely chopped onion, minced garlic, fresh parsley, ground cumin, and ground coriander. Season the mixture with salt and black pepper to taste.
  2. Using clean hands, thoroughly mix the chicken mixture until it holds together and feels slightly tacky.
  3. Wet your hands and roll portions of the mixture into 10-12 oval-shaped koftas.
  4. Preheat your grill to medium-high heat, around 200°C (400°F) and lightly oil the grill grates.
  5. Carefully place the shaped kofta on the heated grill. Cook for 5-7 minutes on each side, turning only once.
  6. While the kofta is grilling, prepare the garlic yogurt sauce by mixing the plain yogurt with fresh lemon juice, salt, and minced garlic.
  7. Once the kofta is grilled to perfection, remove them from the grill and let them rest for a minute. Serve alongside the creamy garlic yogurt sauce.

Avoid overmixing the kofta mixture to keep it tender. Wet hands help in shaping the koftas without sticking. A meat thermometer can ensure the kofta is cooked fully.
