- In a large mixing bowl, combine the ground chicken, finely chopped onion, minced garlic, cilantro, mint, egg, breadcrumbs, and spices including cumin, coriander, smoked paprika, cayenne, salt, and black pepper. Use your hands to mix gently until just combined.
- Shape a small portion of the mixture into a patty and heat a skillet over medium heat with a dash of olive oil. Cook the patty for about 2-3 minutes on each side until golden brown and fully cooked. Taste it and adjust seasoning as necessary.
- With wet hands, take portions of the chicken mixture and shape them into elongated kofta, about 1.5 to 2 inches long. Place the formed kofta on a lined baking sheet.
- Cover the baking sheet with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
- Remove kofta from the refrigerator and heat a skillet with olive oil. Cook the kofta for 6-8 minutes, turning occasionally until they are golden brown and reach an internal temperature of 165°F.
- Prepare the creamy garlic yogurt sauce by mixing Greek yogurt, minced garlic, lemon juice, chopped dill, and olive oil until smooth. Adjust seasoning with salt and pepper.
- Transfer the cooked kofta to a serving platter and drizzle with the garlic yogurt sauce. Serve with warm pita, rice, or a fresh salad.
