  • 1 cup Water or coconut milk for creaminess
For the Finish
  • ½ lemon Lemon Juice freshly squeezed
  • Fresh Coriander for garnish
  • 2 tablespoons Vegetable Oil for sautéing

Method
 

Preparation Steps
  1. Heat the oil in a large pan over medium heat until it shimmers.
  2. Sauté garlic, green chili, and ginger for about 1 minute until fragrant.
  3. Add diced onion and cook for 3-4 minutes until golden brown.
  4. Stir in turmeric, chili powder, ground cumin, ground coriander, and garam masala. Cook for 1 minute.
  5. Add chopped tomatoes and water, bringing to a gentle boil for about 5 minutes.
  6. Reduce heat to low and simmer uncovered for 10-15 minutes, stirring occasionally.
  7. Incorporate chicken thighs into the sauce and cover. Cook for about 20 minutes.
  8. Squeeze lemon juice and garnish with fresh coriander before serving.
