Preparation
  1. Prepare Marinade: Whisk together hoisin sauce, soy sauce, oyster sauce, honey, Shaoxing wine, sesame oil, five-spice powder, brown sugar, minced garlic, grated ginger, and optional red food coloring until smooth.
  2. Marinate Chicken: Coat chicken thighs with the marinade and refrigerate for at least 4 hours.
  3. Preheat Oven: Preheat oven to 400°F (200°C) and prepare a baking tray with wire rack.
  4. Drain Chicken: Let excess marinade drip off the chicken before placing on the wire rack.
  5. Bake Chicken: Bake for 25-30 minutes until internal temperature reaches 165°F (75°C).
  6. Baste: Baste every 10 minutes during baking with reserved marinade.
  7. Broil: Broil for the last 5 minutes for a caramelized finish.
