Step-by-Step Instructions
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 cup of sliced scallions and 3 minced garlic cloves, sauté for 2-3 minutes until fragrant.
  2. Stir in 2 cups of diced tomatoes and ¼ cup of chopped cilantro with a pinch of salt. Cook for an additional 2 minutes.
  3. Add 1.5 pounds of beef stew meat, 1 cup of light beer, and 1 cup of water. Sprinkle in 2 teaspoons of cumin, 1 tablespoon of adobo seasoning, and 1 teaspoon of achiote.
  4. Cover the pot with a lid, reduce the heat to low, and simmer for about 1.5 hours, stirring occasionally.
  5. After the beef has tenderized, add 1 pound of halved baby red potatoes. Stir gently and cover again, cooking for another 20 minutes.
  6. Remove the bay leaf from the pot and serve your hearty Carne Guisada over a bed of cooked rice.
