- In a large pot, heat 2 tablespoons of olive oil over medium heat. Add 1 cup of sliced scallions and 3 minced garlic cloves, sauté for 2-3 minutes until fragrant.
- Stir in 2 cups of diced tomatoes and ¼ cup of chopped cilantro with a pinch of salt. Cook for an additional 2 minutes.
- Add 1.5 pounds of beef stew meat, 1 cup of light beer, and 1 cup of water. Sprinkle in 2 teaspoons of cumin, 1 tablespoon of adobo seasoning, and 1 teaspoon of achiote.
- Cover the pot with a lid, reduce the heat to low, and simmer for about 1.5 hours, stirring occasionally.
- After the beef has tenderized, add 1 pound of halved baby red potatoes. Stir gently and cover again, cooking for another 20 minutes.
- Remove the bay leaf from the pot and serve your hearty Carne Guisada over a bed of cooked rice.
