Ingredients
  

For the Chicken
  • 1 lb Chicken Thighs or chicken breasts as a substitute
  • 2 Tbsp Lime Juice freshly squeezed for best flavor
  • 2 Tbsp Avocado Oil can substitute with olive or vegetable oil
  • 1 Tbsp Chili Powder use milder if desired
  • 1 tsp Ground Cumin optional but recommended
  • 1 tsp Garlic Powder or fresh minced garlic
  • 1 tsp Salt
  • 1 tsp Black Pepper
For the Corn Mixture
  • 2 cups Sweet Corn frozen corn is acceptable
  • 1 small Red Onion diced; green onions can be used as an alternative
  • 1 cup Sour Cream can substitute with Greek yogurt
  • 1 4 Cup Mayonnaise use plant-based mayo for a vegan option
  • 1/2 cup Cotija Cheese can substitute with feta cheese
For the Bowl Assembly
  • 2 cups Rice any variety; seasoned rice works well
  • 1/4 cup Cilantro chopped; optional but recommended
  • 2 Limes Lime Wedges for serving

Method
 

Instructions
  1. In a bowl, mix lime juice, avocado oil, chili powder, ground cumin, garlic powder, salt, and black pepper. Coat the chicken thighs thoroughly in this marinade, then refrigerate for at least 15 minutes.
  2. Heat a skillet over medium-high heat, add avocado oil, and sear the marinated chicken thighs for about 8-10 minutes, flipping halfway through.
  3. In a mixing bowl, combine sweet corn, diced red onion, sour cream, mayonnaise, Cotija cheese, and a splash of lime juice. Stir until well-blended and creamy.
  4. Cook rice according to package instructions, then fluff with a fork. Mix in fresh chopped cilantro.
  5. To assemble, layer the fluffy rice at the bottom, add sliced chicken, and spoon the creamy corn mixture on top.
  6. Garnish with extra Cotija cheese and fresh cilantro. Serve with lime wedges.
