Step‑by‑Step Instructions
  1. Start by preparing your ingredients for the Tasty Baked Breakfast Tacos. Dice firm potatoes into small cubes and set aside. In a skillet over medium heat, cook the bacon until it's crispy and golden, about 6-8 minutes. Once done, remove it from the pan and allow it to drain on paper towels, keeping the bacon fat in the skillet for added flavor.
  2. In the same skillet with the bacon fat, add the diced potatoes and season with salt and pepper. Sauté them for about 10-12 minutes, stirring occasionally, until they turn golden and are tender when pierced with a fork.
  3. While the potatoes are cooking, whisk together fresh eggs in a bowl until well combined. Once the potatoes are tender, reduce the heat to low and pour the eggs into the skillet with the potatoes. Gently stir them together until the eggs are just set, about 3-4 minutes, then add the crispy bacon back into the pan.
  4. Preheat your oven to 375°F (190°C). Take a corn tortilla, spoon in a generous portion of the egg, potato, and bacon mixture, and sprinkle with freshly grated Monterey Jack cheese. Fold the tortilla over to create a taco shape and repeat until all ingredients are used.
  5. Place the assembled tacos in a baking dish, seam side down. Bake in the preheated oven for 15-20 minutes, or until the cheese is bubbly and starts to turn golden.
  6. Once out of the oven, let your Tasty Baked Breakfast Tacos cool for a couple of minutes before serving.
