Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and prepare an oven-safe skillet.
  2. Slice chicken into uniform cutlets and season with garlic powder, chili powder, salt, and pepper.
  3. Sauté the chicken in olive oil for 3-4 minutes per side until golden brown.
  4. Sauté chopped onion for around 5 minutes until translucent.
  5. Mix in the Ro-tel diced tomatoes, black beans, and corn, and heat for about 2 minutes.
  6. Combine sautéed chicken with vegetables and sprinkle with Mexican cheese blend.
  7. Bake for 5-7 minutes until cheese is bubbly and internal temperature reaches 165°F.
  8. Garnish with chopped cilantro and serve warm.
