- Wash the romaine lettuce thoroughly under cold water. Slice it into thin ribbons and spin it dry in a salad spinner for about 30 seconds.
- Arrange the lettuce on a kitchen towel to remove remaining moisture.
- In a medium bowl, combine olive oil, lemon juice, salt, and pepper. Whisk until emulsified.
- In a large bowl, add the dried lettuce, chopped green onions, and fresh dill. Crumble feta on top and gently toss.
- Drizzle dressing over the salad and gently toss to coat all leaves.
- Garnish with extra dill and serve immediately.
