Preparation
  1. Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan.
  2. Combine graham cracker crumbs, ¼ cup sugar, and melted butter in a bowl.
  3. Press mixture into pan and bake for 8-10 minutes until golden.
  4. Beat cream cheese and 1 cup sugar until smooth. Mix in sour cream and vanilla.
  5. Add eggs one at a time, mixing gently after each addition.
  6. Cook blueberries, 2 tbsp sugar, and lemon juice for 5-7 minutes. Thicken with cornstarch and water.
  7. Pour filling into crust, swirl in blueberry mixture, and bake for 50-60 minutes.
  8. Cool in oven with door ajar for an hour. Chill for at least 4 hours or overnight before serving.
  9. Run a knife around the edge of the pan, release sides, slice, and serve.
