Method
 

Step-by-Step Instructions
  1. In a medium saucepan, heat a splash of oil over medium heat. Add the chopped onion, minced garlic, and diced habanero peppers; sauté for 3-4 minutes until fragrant and translucent.
  2. Stir in the chopped pineapple, apple cider vinegar, water, lime juice, honey (if using), and salt. Mix well and bring to a simmer.
  3. Allow the sauce to simmer uncovered for 10-15 minutes, stirring occasionally until the pineapple softens and the mixture reduces.
  4. Transfer the mixture to a blender and blend on high until smooth, adding more water for desired consistency.
  5. For a smooth texture, strain the sauce through a fine-mesh sieve, using a spatula to push through.
  6. Let the sauce cool completely at room temperature before transferring to a sterilized bottle or jar.
