Step-by-Step Instructions
  1. Pat the chicken breasts dry with paper towels and cut into bite-sized cubes. Season with salt and black pepper. Chop onion and mince garlic.
  2. Heat olive oil in the skillet over medium-high heat. Add chicken in a single layer and cook for 5-7 minutes until golden brown and cooked through. Remove chicken and set aside.
  3. In the same skillet, add chopped onion and sauté for around 5 minutes until softened. Then add minced garlic and cook for an additional minute.
  4. Deglaze the skillet with reserved pepperoncini juice. Then stir in chopped pepperoncini, chicken broth, Italian seasoning, and red pepper flakes. Simmer for about 5 minutes.
  5. Return chicken to the skillet and stir in heavy cream. Simmer together for another 5 minutes allowing the sauce to thicken.
  6. Garnish with chopped parsley and serve hot over pasta or rice.
