- Pat the chicken breasts dry with paper towels and cut into bite-sized cubes. Season with salt and black pepper. Chop onion and mince garlic.
- Heat olive oil in the skillet over medium-high heat. Add chicken in a single layer and cook for 5-7 minutes until golden brown and cooked through. Remove chicken and set aside.
- In the same skillet, add chopped onion and sauté for around 5 minutes until softened. Then add minced garlic and cook for an additional minute.
- Deglaze the skillet with reserved pepperoncini juice. Then stir in chopped pepperoncini, chicken broth, Italian seasoning, and red pepper flakes. Simmer for about 5 minutes.
- Return chicken to the skillet and stir in heavy cream. Simmer together for another 5 minutes allowing the sauce to thicken.
- Garnish with chopped parsley and serve hot over pasta or rice.
