  • 1/2 tsp Pandan Paste or Extract Opt for artificial for maximum strength.
For the Glaze
  • 7 tbsp Confectioner’s Sugar Provides sweetness and glossiness.
  • 2-3 tsp Water Adjusts the consistency of the glaze.
For the Topping
  • Desiccated Coconut Adds delightful texture and a tropical touch.

Step-by-Step Instructions
  1. In a large mixing bowl, whisk together the eggs and castor sugar for 3-4 minutes until pale and frothy. Sift in the cake flour and baking powder, mixing gently until combined. Stir in melted butter and pandan paste, then chill the batter for at least 1 hour.
  2. Preheat the oven to 400°F (200°C) and grease madeleine pans with butter or cooking spray.
  3. After chilling, gently stir the batter to soften it. Use a piping bag or spoon to fill the molds 80-90% full.
  4. Bake for 10-12 minutes at 350°F (180°C) until golden brown and springy to the touch.
  5. Cool in the pans for a few minutes before transferring to a wire rack. Mix confectioner’s sugar with water, brush on each madeleine, and dip into desiccated coconut before serving.
