Method
 

Cooking Steps
  1. Pound the chicken to an even thickness of about ½ inch.
  2. Prepare the coating mix by whisking together flour, salt, pepper, garlic powder, onion powder, paprika, and cayenne pepper.
  3. Make the buttermilk mixture by whisking eggs with buttermilk.
  4. Dredge the chicken in the flour mixture, then shake off excess.
  5. Dip the chicken in the buttermilk mixture thoroughly.
  6. Coat the chicken again in the flour mixture, pressing it on firmly.
  7. Heat vegetable oil in a deep skillet over medium-high heat.
  8. Fry the chicken for 5–7 minutes on each side until golden and cooked through.
  9. Drain the chicken on paper towels to absorb excess oil.
  10. Let the chicken rest for a few minutes before serving, garnished with parsley if desired.
