  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with cupcake liners or cooking spray.
  2. Mash 2-3 ripe bananas in a large bowl until smooth, then mix in 1/4 cup melted unsalted butter.
  3. Add 1/2 teaspoon baking soda, a pinch of salt, 1/2 cup sugar, 1 beaten large egg, and 1 teaspoon vanilla extract, and mix until smooth.
  4. Gently fold in 1 1/2 cups all-purpose flour until just incorporated.
  5. Fill muffin cups halfway with batter and create a small well in the center.
