For the Mushrooms
  • 150 grams Button mushrooms Sliced.
  • 100 grams Oyster mushrooms Sliced; can be left out if not available.
For Finishing Touches
  • 2 tablespoons Parsley Fresh, chopped.
  • 30 grams Parmesan Grated; use nutritional yeast for a vegan alternative.

Method
 

Step-by-Step Instructions
  1. Boil a large pot of salted water. Add spaghetti and cook until al dente (8-10 minutes). Reserve a cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium-high heat. Add sliced button and oyster mushrooms. Sauté for 4-5 minutes until golden.
  3. Reduce heat and add remaining olive oil. Add chopped garlic and cook for 1-2 minutes until fragrant.
  4. Stir in chili flakes and reserved pasta water. Season with salt and simmer for 2-3 minutes.
  5. Add drained spaghetti to the skillet and toss together until well coated.
  6. Remove from heat and fold in chopped parsley. Serve topped with grated Parmesan.
