Method
 

Instructions
  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, toss cubed eggplant with olive oil, season with salt and pepper, and spread evenly.
  3. Roast the eggplant for 20-25 minutes, flipping halfway through.
  4. In a bowl, whisk together the miso paste, mirin, soy sauce, honey, ginger, and garlic until smooth.
  5. Once roasted, brush the miso glaze over the warm eggplant.
  6. Return the glazed eggplant to the oven for an additional 5-7 minutes until bubbly.
  7. Remove and garnish with sesame seeds and chopped green onions before serving.
