  • 1 medium Red Bell Pepper
  • 1 medium Yellow Bell Pepper can be omitted
  • 1 medium Green Bell Pepper can substitute with other peppers
  • 1 medium Yellow Onion red onion can be used
  • 3 cloves Garlic minced
  • 1 lb Chicken Breast can substitute with thighs
  • 2 tbsp Fajita Seasoning store-bought or homemade
  • 2 tbsp Lime Juice for bright flavors
  • 1 tbsp Chili Powder adjust to taste
Optional Toppings
  • 4 pieces Tortillas flour or corn
  • 1 cup Cheese shredded, like cheddar or Monterey Jack
  • 1 cup Sour Cream or Greek yogurt
  • 1 cup Guacamole
  • 0.5 cup Fresh Cilantro for garnish

Method
 

Step-by-Step Instructions
  1. Slice chicken breast into strips and dice red, yellow, and green bell peppers. Chop onion and mince garlic.
  2. Layer salsa in the crockpot, followed by half the bell peppers and onions, minced garlic, and chicken strips.
  3. Sprinkle fajita seasoning and chili powder over chicken, then add remaining salsa, bell peppers, and onions.
  4. Squeeze lime juice over the ingredients in the crockpot.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until chicken reaches 165°F.
  6. Shred chicken in the crockpot and mix with vegetables.
  7. Serve with warm tortillas, cheese, sour cream, or guacamole.
