Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the pricked sweet potatoes on the lined baking sheet and roast them for 40–50 minutes.
  3. While the sweet potatoes are roasting, chop and combine the filling ingredients in a large bowl.
  4. In a small bowl, whisk together extra virgin olive oil, fresh lemon juice, minced garlic, dried oregano, salt, and black pepper.
  5. Pour the freshly made dressing over the filling ingredients and toss until well-coated.
  6. Once the sweet potatoes are roasted, slice them lengthwise and fluff the insides.
  7. Generously spoon the filling mixture into each sweet potato and serve immediately.
