Step-by-Step Instructions for Mango Dream Bars
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking pan by lining it with parchment paper or lightly greasing it.
  2. Combine flour, sugar, and salt in a mixing bowl. Cut in softened butter and vanilla extract, mixing until coarse crumbs form. Press mixture into the bottom of the prepared pan.
  3. Bake the crust for 12-15 minutes until lightly golden. Allow it to cool slightly.
  4. In a saucepan, whisk together mango puree, sugar, cornstarch, lemon juice, and salt. Cook over medium heat, stirring constantly for 5-7 minutes until thickened. Cool slightly.
  5. Stir in eggs one at a time and mix until smooth. Add vanilla extract and mix well.
  6. Pour the mango filling over the cooled crust and spread evenly. Bake for an additional 20-25 minutes until set.
  7. Cool to room temperature, then refrigerate for 1-2 hours before cutting into squares to serve.
