Cookie Preparation
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- Whisk together the flour, baking soda, baking powder, and salt until well combined.
- Melt the butterscotch chips in a microwave-safe bowl in 20-second intervals until smooth.
- Beat together the softened butter, granulated sugar, and brown sugar until fluffy, about 2-3 minutes.
- Mix in the melted butterscotch chips, eggs, vanilla extract, butter extract, rum extract, and cream soda.
- Gradually add the dry mixture and mix until just combined.
- Chill the dough covered in plastic wrap for 30 minutes to 2 hours.
- Scoop the dough into equal-sized balls and place them on prepared baking sheets, spaced 2 inches apart.
- Bake for 10-12 minutes until edges are set but centers are soft.
- Remove from oven and cool on baking sheets for 5 minutes before transferring to a wire rack.
- Mix the sifted powdered sugar with heavy cream or milk until smooth to prepare frosting.
- Once cookies are cooled, apply frosting generously on top of each cookie.
