Preparation
- Prepare the Marinade: In a food processor, combine oil, soy sauce, brown sugar, lemon or lime juice, garlic, ginger, red chilli, and lemongrass. Blend until smooth, adjusting seasoning with salt.
- Marinate the Wings: Place chicken wings in a mixing bowl and pour marinade over them. Ensure each wing is thoroughly coated. Cover with plastic wrap and refrigerate for at least 30 minutes, or overnight for deeper flavor.
- Preheat the Air Fryer: Preheat your air fryer to 200°C (390°F) for about 5 minutes.
- Cook the Wings: Arrange wings in a single layer in the air fryer. Cook for 15-20 minutes, turning halfway, until golden-brown and caramelized.
- Toast the Peanuts: In a small pan over medium heat, toast chopped peanuts for about 5 minutes until golden brown and fragrant.
- Serve the Wings: Transfer wings to a platter, garnish with toasted peanuts, red chilli, and spring onion.
