Ingredients
  

For the Wings
  • 1 kg Chicken Wings
  • 2 tbsp Oil sesame or peanut oil recommended
For the Marinade
  • 1/2 cup Soy Sauce use tamari or coconut aminos for gluten-free
  • 1/4 cup Brown Sugar coconut sugar makes a great alternative
  • 2 tbsp Lemon/Lime Juice or rice vinegar for a different zing
  • 4 cloves Garlic minced
  • 1 tbsp Fresh Ginger grated
  • 1 pcs Red Chilli for heat and color
  • 1 stalk Lemongrass roughly chopped
  • to taste Salt
For Garnish
  • 1/4 cup Peanuts roughly chopped, optional
  • 1 pcs Finely Chopped Red Chilli optional
  • 2 stalks Spring Onion finely chopped

Method
 

Preparation
  1. Prepare the Marinade: In a food processor, combine oil, soy sauce, brown sugar, lemon or lime juice, garlic, ginger, red chilli, and lemongrass. Blend until smooth, adjusting seasoning with salt.
  2. Marinate the Wings: Place chicken wings in a mixing bowl and pour marinade over them. Ensure each wing is thoroughly coated. Cover with plastic wrap and refrigerate for at least 30 minutes, or overnight for deeper flavor.
  3. Preheat the Air Fryer: Preheat your air fryer to 200°C (390°F) for about 5 minutes.
  4. Cook the Wings: Arrange wings in a single layer in the air fryer. Cook for 15-20 minutes, turning halfway, until golden-brown and caramelized.
  5. Toast the Peanuts: In a small pan over medium heat, toast chopped peanuts for about 5 minutes until golden brown and fragrant.
  6. Serve the Wings: Transfer wings to a platter, garnish with toasted peanuts, red chilli, and spring onion.
