Ingredients
  

For the Stir Fry
  • 2 tablespoons vegetable oil can use canola or sunflower oil
  • 1 pound chicken breast, sliced thighs can add richer flavor
  • 2 cloves garlic, minced fresh garlic is recommended
  • 1 tablespoon ginger, minced fresh ginger recommended
  • 1 medium bell pepper, sliced zucchini or snap peas can be substituted
  • 1 medium onion, sliced red or yellow onions work well
For the Sauce
  • 3 tablespoons gochujang key ingredient for spiciness
  • 2 tablespoons soy sauce use tamari for gluten-free option
  • 1 tablespoon sesame oil can replace with another mild oil
  • 1 tablespoon honey maple syrup can be a vegan alternative
For Garnishing
  • to taste sesame seeds optional but highly recommended
  • to taste green onions, chopped chives can be substituted

Method
 

Cooking Steps
  1. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat until shimmering.
  2. Add 1 pound of sliced chicken breast to the skillet and cook for 5-7 minutes until golden.
  3. Stir in 2 cloves of minced garlic and 1 tablespoon of minced ginger, sauté for 1 minute until fragrant.
  4. Add sliced bell pepper and onion; stir-fry for 3-4 minutes until softened but crisp.
  5. In a small bowl, whisk together 3 tablespoons of gochujang, 2 tablespoons of soy sauce, 1 tablespoon of sesame oil, and 1 tablespoon of honey until combined.
  6. Pour the sauce over the chicken and vegetables, stir to coat, and cook for an additional 2-3 minutes.
  7. Remove from heat, garnish with sesame seeds and chopped green onions, and serve hot.
