  • 4 large Eggs
  • 4 oz Cream Cheese Can substitute with mascarpone
  • 2 tbsp Butter (salted) Can substitute with ghee or coconut oil
  • 1 tsp Vanilla Extract Can substitute with almond extract
  • 1/4 cup Coconut Flour Can substitute with almond flour
  • 1 tsp Baking Powder
For Serving
  • to taste Sugar-Free Maple Syrup Can use fresh fruit or another low-carb syrup

Method
 

Preparation
  1. Bring eggs, cream cheese, and butter to room temperature. Blend together with vanilla until smooth and creamy.
  2. Add coconut flour and baking powder, pulsing just until combined.
  3. Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment paper.
  4. Pour batter into the pan and bake for 50-60 minutes until firm.
  5. Let cool for 10 minutes, then transfer to a wire rack. Refrigerate for a few hours or overnight.
  6. Slice loaf into sticks.
  7. Heat butter in a skillet over medium-low heat, fry sticks for 2-3 minutes on each side until golden brown.
  8. Serve warm with syrup or fresh berries.
