- Prepare the cheese mixture by crumbling feta cheese and grating kefalograviera. Mix in cracked pepper.
- Lay out the phyllo sheet and coat with olive oil using a pastry brush.
- Sprinkle the cheese mixture evenly over the oiled phyllo sheet.
- Add another phyllo sheet on top of the cheese, brush with olive oil, and sprinkle more cheese.
- Repeat layering for four total sheets with cheese in between.
- Roll the layered phyllo tightly like a log and pinch the ends to secure.
- Wrap the roll in plastic wrap and freeze for at least one hour.
- Preheat the oven to 350°F (175°C).
- Slice the frozen roll into 1-inch pieces and arrange on a greased pan.
- Bake for 20 to 30 minutes until golden brown and flaky.
- Serve warm, optionally with tzatziki dip.
