Ingredients
  

Cheese Filling
  • 8 ounces Feta Cheese Crumble before mixing
  • 4 ounces Kefalograviera Cheese Grated, or substitute with pecorino
  • to taste Pepper Freshly cracked
Phyllo Layers
  • 8 sheets Phyllo Sheets Ensure fully defrosted
  • 1/2 cup Olive Oil For brushing

Method
 

Instructions
  1. Prepare the cheese mixture by crumbling feta cheese and grating kefalograviera. Mix in cracked pepper.
  2. Lay out the phyllo sheet and coat with olive oil using a pastry brush.
  3. Sprinkle the cheese mixture evenly over the oiled phyllo sheet.
  4. Add another phyllo sheet on top of the cheese, brush with olive oil, and sprinkle more cheese.
  5. Repeat layering for four total sheets with cheese in between.
  6. Roll the layered phyllo tightly like a log and pinch the ends to secure.
  7. Wrap the roll in plastic wrap and freeze for at least one hour.
  8. Preheat the oven to 350°F (175°C).
  9. Slice the frozen roll into 1-inch pieces and arrange on a greased pan.
  10. Bake for 20 to 30 minutes until golden brown and flaky.
  11. Serve warm, optionally with tzatziki dip.
