Step‑by‑Step Instructions
  1. In a large skillet, melt 2 tablespoons of unsalted butter over medium-low heat. Add 2 sliced yellow onions along with a pinch of salt and freshly ground black pepper. Cook slowly for 30-40 minutes, stirring occasionally until the onions are golden brown, soft, and sweet.
  2. While the onions are caramelizing, preheat your oven to 375°F (190°C).
  3. In a mixing bowl, combine 1 cup of shredded smoked Gouda cheese, 8 ounces of softened cream cheese, ½ cup of sour cream, ¼ cup of mayonnaise, and 2 cloves of minced garlic. Stir until smooth and creamy.
  4. Once the onions are beautifully caramelized and have cooled slightly, gently fold them into the cheese mixture.
  5. Spoon the dip mixture into an 8x8 inch baking dish and bake for 20-25 minutes, until the edges are bubbly and the top is golden brown.
  6. Remove from the oven, let cool for a couple of minutes, and garnish with freshly chopped chives. Serve warm with sturdy crackers or crusty bread.
