Step‑by‑Step Instructions
- In a large skillet, melt 2 tablespoons of unsalted butter over medium-low heat. Add 2 sliced yellow onions along with a pinch of salt and freshly ground black pepper. Cook slowly for 30-40 minutes, stirring occasionally until the onions are golden brown, soft, and sweet.
- While the onions are caramelizing, preheat your oven to 375°F (190°C).
- In a mixing bowl, combine 1 cup of shredded smoked Gouda cheese, 8 ounces of softened cream cheese, ½ cup of sour cream, ¼ cup of mayonnaise, and 2 cloves of minced garlic. Stir until smooth and creamy.
- Once the onions are beautifully caramelized and have cooled slightly, gently fold them into the cheese mixture.
- Spoon the dip mixture into an 8x8 inch baking dish and bake for 20-25 minutes, until the edges are bubbly and the top is golden brown.
- Remove from the oven, let cool for a couple of minutes, and garnish with freshly chopped chives. Serve warm with sturdy crackers or crusty bread.
