- In a large mixing bowl, combine ground pork with chopped basil, minced garlic, sliced green onions, fish sauce, sriracha, sugar, cornstarch, black pepper, and kosher salt. Mix thoroughly and form into four patties.
- In a small bowl, whisk together mayonnaise with green onions and sriracha until smooth. Adjust sriracha to taste.
- Heat sesame oil in a skillet over medium heat. Cook patties for about 5 minutes on each side until golden brown and cooked to 160°F.
- Toast brioche buns until golden brown. Spread sriracha mayo on inner sides of each bun. Layer with pickled vegetables, cilantro, jalapeños, pork patty, and cucumber slices.
- Serve warm with extra pickled veggies on the side or crispy fries.
