  • 2 scallions Green Onions Can use scallions or chives.
  • 1 tablespoon Fish Sauce Soy sauce is an alternative for vegetarians.
  • 2 tablespoons Sriracha Adjust spice level as preferred.
  • 1 teaspoon Sugar Brown sugar for richer taste.
  • 1 tablespoon Cornstarch Arrowroot powder may work as well.
  • 1/2 teaspoon Black Pepper Use white pepper if preferred.
  • 1 teaspoon Kosher Salt Sea salt is a substitute.
For the Spicy Sriracha Mayo
  • 1/2 cup Mayonnaise Greek yogurt can be a lighter alternative.
  • 1 teaspoon Toasted Sesame Oil Optional but adds flavor.
For Assembly
  • 4 buns Brioche Buns Whole wheat or gluten-free buns are alternatives.
  • 1/2 cup Cilantro Leave out for a cilantro-free burger.
  • 1 medium Jalapeño Omit or replace with milder peppers if desired.
  • 1 cup Persian Cucumbers Any cucumber variety will work.

Method
 

Preparation
  1. In a large mixing bowl, combine ground pork with chopped basil, minced garlic, sliced green onions, fish sauce, sriracha, sugar, cornstarch, black pepper, and kosher salt. Mix thoroughly and form into four patties.
  2. In a small bowl, whisk together mayonnaise with green onions and sriracha until smooth. Adjust sriracha to taste.
  3. Heat sesame oil in a skillet over medium heat. Cook patties for about 5 minutes on each side until golden brown and cooked to 160°F.
  4. Toast brioche buns until golden brown. Spread sriracha mayo on inner sides of each bun. Layer with pickled vegetables, cilantro, jalapeños, pork patty, and cucumber slices.
  5. Serve warm with extra pickled veggies on the side or crispy fries.

Notes
